A quick pie with cottage cheese is what you need.

Just a little time, a minimum of effort and a delicious and healthy dessert is ready!

Whip the curd pie - the basic principles of cooking

Depending on the cooking method and the ingredients that are used, you can get a simple cake for a family tea party, or a delicious dessert.

The dough for a pie with cottage cheese in a hurry can be cooked puff, shortbread, yeast or any other. The basis for the cake can be made from crumbs of cookies.

Cottage cheese is better to take homemade, but if you want the baking to be dietary, you can use low-calorie. The curd is rubbed through a sieve so that it is not lumps. Then add sugar, sour cream, eggs to it and beat thoroughly with a blender until smooth. Also, the filling can be prepared with cream. They are whipped into a strong foam, then cottage cheese and sugar are added to them.

You can add fresh berries, finely chopped fruits, nuts or dried fruits to the filling. All mix well.

The dough is distributed in shape, making sides, after which it is poured with curd mass. Top the filling can be covered with a second layer of dough, or leave the cake open.

The taste of the cake depends on your imagination and the products that you use for cooking.

Recipe 1. Pie with curd in a hurry

Ingredients

150 g cookies;

a handful of raisins;

85 g butter;

lemon zest;

120 g sour cream;

25 g of starch;

egg;

400 g of cottage cheese;

75 g of granulated sugar.

Cooking method

1. Preheat the oven to 170 C. Add three tablespoons of sour cream to the grated curd. Beat the egg separately and add to the curd. Put lemon zest and starch here. Grind everything well or interrupt with a blender until smooth. Wash raisins and add to cottage cheese. Stir everything with a spoon. It should turn out mass, consistency of thick sour cream.

2. Break the cookies and put them in the blender's container. Grind it into crumbs. Add soft butter and sour cream to it. Knead the dough. Put it in a detachable form and distribute with your palms along the bottom, forming sides, four centimeters high.

3. Put the curd on the cake and flatten. Send the form to the oven for half an hour. Bake at 180 C. When the cake is browned, remove it from the oven and cool completely. Slice and serve with drinks.

Recipe 2. Pie with curd and blueberries in a hurry

Ingredients

Dough

margarine - 150 g;

baking powder - 10 g;

granulated sugar - 150 g;

a glass of flour;

egg;

vanilla sugar - 10 g.

Filling

cottage cheese - 600 g;

blueberries - 300 g;

four eggs;

potato starch - 100 g;

sugar - 150 g.

For filing

icing sugar.

Cooking method

1. Pound the soft butter with cane and vanilla sugar. Beat the egg and mix. Combine flour with baking powder. Pour the resulting mixture into the egg-oil mixture and knead the dough.

2. Place the dough in a split mold, greasing it with butter. Form high enough sides.

3. Separate the whites from the yolks. Pound the last with sugar. Now add the mashed curd and starch. Mix everything well.

4. Add a pinch of salt to the proteins and beat them into a dense foam. Add whipped proteins to the curd and mix gently with a spatula.

5. Put the resulting mass on the dough and smooth.

6. Leave some blueberries for decoration. Put the remaining berries in a blender bowl, pour a spoonful of sugar and beat well.

7. Pour the berry mass over the curd cream. If you wish, you can make patterns with a fork. Put the pie for an hour in the oven, heated to 180 C. If the top starts to burn, cover the pie with a sheet of foil. Remove the finished cake from the oven, sprinkle with powdered sugar and garnish with blueberries.

Recipe 3. pie with curd whipped from puff pastry "Scythe"

Ingredients

packaging of finished puff pastry;

a handful of raisins;

half a kilogram of cottage cheese;

two tablespoons of sugar;

egg;

75 g semolina.

Cooking method

1. Ready puff pastry is completely defrosted. Preheat the oven.

2. Grind the cottage cheese with sugar and egg. If the mass turned out to be liquidish, pour the semolina.

3. Wash raisins and pour hot water. Leave it for a quarter of an hour and drain the water. We dry the raisins on a paper towel and interfere in the curd mass.

4. Thaw the defrosted dough and cut it in half. We roll out each part and mentally divide the layer of dough into three parts. We cut the left and right sides obliquely into strips of two centimeters wide. In the middle we spread the curd filling with a slide.

5. Alternately, put strips of dough on the filling, as if braiding a braid. Pinch the edges of the pie. From the second piece of dough we make the same pie with cottage cheese. We spread the pies on a baking sheet covered with parchment. Grease the top with a beaten egg. We send the baking sheet into the oven and bake until the top is browned.

Recipe 4. Pie with curd whipped up "Curd"

Ingredients

Dough

baking powder - 7 g;

butter - 150 g;

granulated sugar - a glass;

flour - two glasses.

Filling

low-fat cottage cheese - 400 g;

vanillin;

sugar - a glass;

raisins and dried apricots;

five eggs.

Cooking method

1. Add sugar, baking powder and flour to soft butter. Grind everything to the state of crumbs.

2. Beat eggs with sugar and add mashed curd. Beat well until smooth.

3. Cover the form with parchment and lightly grease it with oil. We spread half the dough and level it. On top of the dough, put the curd filling and sprinkle with the remaining dough.

4. Bake the cake for half an hour at medium temperature. As soon as the top of the cake is browned, remove it from the oven and cool.

Recipe 5. Pie with curd whipped up "Successful"

Ingredients

300 g of cottage cheese;

6 g of baking soda;

three eggs;

a glass of sugar;

250 g mayonnaise;

two glasses of flour.

Cream

vanillin;

a glass of sour cream;

half a glass of granulated sugar.

Cooking method

1. Turn on the oven at 180 C. Put the cottage cheese in a bowl and grind it well. Add soda, eggs, granulated sugar and mayonnaise to it. Beat everything with a blender. Now add a little flour and knead the dough thoroughly until the consistency of homemade sour cream.

2. Lubricate the mold with a piece of oil and sprinkle with flour. We spread the dough into the form and level it. We put the form on the average level of the oven and bake until golden brown for forty minutes. We take it out of the oven and leave the cake in shape for another five minutes. Then take out and transfer to the dish.

3. The cooled cake is cut carefully in half. Beat sour cream with vanilla and a glass of sugar with a mixer. Lubricate the cakes with sour cream and leave to soak for an hour.

Recipe 6. Apricot and raspberry pie with curd

Ingredients

Dough

milk - 30 ml;

flour - 200 g;

soft oil - 125 g;

sugar - 75 g;

a bag of vanilla sugar;

salt is a pinch.

Filling

125 g raspberries;

low-fat cottage cheese - 750 g;

canned apricots - 250 g;

four eggs;

creamy vanilla pudding - a pack;

sugar - 150 g;

zest of half a lemon;

salt - a pinch;

vanilla sugar - a pack.

For lubrication

water - 30 ml;

apricot jam - 80 g.

Cooking method

1. Pour flour into a deep container, add the remaining ingredients and mix everything with a mixer, starting at a low speed. Then knead the dough with your hands, wrap it in film and put it in the refrigerator.

2. Put the half of the dough into a split mold and knead it on the bottom with your hands. In several places we pierce it with a fork. Preheat the oven to 180 C and send the mold into it for ten minutes.

3. In a deep bowl, combine the cottage cheese with eggs, a mixture of pudding, sugar, lemon zest, salt and vanilla sugar. We thoroughly interrupt the blender into a homogeneous mass. Apricots are thrown in a colander to get rid of juice. We sort through raspberries and mine.

4. The rest of the dough is rolled into a bundle, and we form a side out of it, four centimeters high. We spread the curd mass in the form. Lay out raspberries and halves of apricots on top. Send the cake to the oven for an hour. We get out and completely cool.

5. Dilute the jam with water and bring to a boil. Grease the pie with this mixture. Cut into portions and serve with hot or cold drinks.

Recipe 7. Pie with cottage cheese and bananas

Ingredients

a bag of vanilla sugar;

three eggs;

three bananas;

250 g of flour;

half a kilogram of cottage cheese;

margarine - 100 g;

6 g of baking powder;

125 g granulated sugar.

Cooking method

1. Soft margarine rub well with sugar. Drive in the egg and mix. Add gradually sifted flour with baking powder and knead smooth dough.

2. Put the dough in a mold covered with baking paper, and make low sides.

3. Combine cottage cheese with eggs and vanilla sugar. Beat everything together with a blender into a homogeneous mass.

4. Remove the peel from the bananas and cut them into circles. We spread them in the curd mass and mix gently so that the bananas do not lose their shape.

5. Evenly distribute the filling on the bottom of the form. We bake in the oven, heated to 200 C for half an hour.

6. We take out the finished cake, cool it, and cut in portions.

Recipe 8. Cherry pie with curd whipped

Ingredients

4 g of baking soda;

egg;

150 g butter;

sugar - 50 g;

a glass of flour.

Filling

a pinch of salt;

cottage cheese - 600 g;

a glass of sugar;

four eggs;

vanillin - a pinch;

starch - 75 g;

fresh or frozen cherry - 400 g;

icing sugar.

Cooking method

1. My cherry and remove the seeds. We spread the berries on a sieve and leave.

2. Mild butter is well ground with sugar. We drive in the egg and continue to grind until smooth. Pour flour with baking soda and knead plastic dough.

3. We grease the cake pan with butter and put the dough into it. Hands evenly distribute it along the bottom and sides.

4. Separate the yolks from the proteins. Add sugar to the yolks and grind them to a white foam with a blender. Now add the vanilla and cottage cheese and continue to interrupt with a blender until the mass becomes smooth, without lumps of cottage cheese. Pour the starch and mix.

5. Slightly salt the whites and beat in a steep foam with a mixer. We spread the whipped proteins into the curd mass and mix gently so that they do not settle.

6. Put the filling on the dough and level the surface with a spatula. We spread the cherry on top and sprinkle it with sugar.

7. Preheat the oven to 180 C. Bake the cake for an hour. The finished cake is completely cooled and sprinkled with powdered sugar.

Whip up cottage cheese pie - tips and tricks

  • Before preparing the filling, it is better to rub the cottage cheese through a sieve to make the curd mass smooth and homogeneous.

  • Instead of cottage cheese, you can use ready-made curd mass.

  • You can add nuts or dried fruits to the filling.

  • Before using the cake, be sure to completely cool.
