White Bean Soup - General Cooking Principles

Bean soups with various additives are prepared. These are vegetables, mushrooms, meat products, poultry. But the product does not combine with pasta and fish. Basically, white beans are supplemented with potatoes, tomato, cabbage. These combinations are win-win and harmoniously coexist in dishes.

Recipe 1: White Bean Chicken Soup

For the preparation of white bean chicken soup, we will use a canned product. With it, the dish is very simple and quick, especially if you use chicken fillet. If you take other parts of the bird, then the broth will have to cook a little longer.

Ingredients

• 0.3 kg of chicken;

• 1 can of white beans;

• 3 potatoes;

• 1 clove of garlic;

• greenery;

• spices;

• 1 onion head;

• 30 ml of oil;

• carrots.

Cooking

1. Cut the chicken into cubes, pour 1.6 liters of water and send to the stove. We are waiting for boiling to remove the foam. Cook exactly 15 minutes, should not be longer.

2. Dice the potatoes. Throw to the chicken.

3. From chopped onions and grated carrots, prepare an ordinary passer in vegetable oil.

4. Open the beans and drain all the liquid.

5. After seven minutes of cooking potatoes, add canned beans to the pan. Salt the dish.

6. Bring the potatoes to full softness and add the fried vegetables.

7. Fill the soup with herbs, spices and you're done!

Recipe 2: Smoked White Bean Soup

The recipe for an insanely fragrant white bean soup, which will require any smoked meats. It can be a brisket, ribs, a piece of ham. You can cook with smoked chicken wings - it will also be delicious!

Ingredients

• 250 grams of white beans;

• 300 grams of smoked meats;

• 300 grams of potatoes;

• 1 bell pepper;

• onion head;

• greens and salt;

• 1 clove of garlic.

Cooking

1. Soak the beans in water for a couple of hours, then boil until soft, pour out the liquid.

2. We put on the stove a saucepan with two and a half liters of water. Let’s boil.

3. Run the potatoes, cook for three minutes.

4. Smoked meats cut into cubes, the same as potatoes. Fry for a minute in a greased pan and add to the potatoes.

5. After boiling, lay the previously boiled white beans. We cook until the potatoes are soft, five minutes before the end of cooking, salt the dish.

6. In the same pan in which the smoked meat was fried, add a spoonful of oil and fry the chopped onion, at the end add sweet pepper cut into small cubes.

7. Transfer the fried vegetables to the pan and cook for another two minutes.

8. Throw chopped herbs, chopped garlic clove and you're done! Bay leaf, spices can be laid to taste.

Recipe 3: White Bean Tomato Soup

For this white bean soup, it is best to use canned tomatoes. They will give the dish a bright and rich taste. But if they are not, then replace with tomato sauce, ordinary tomatoes or diluted pasta.

Ingredients

• 0.15 kg of white beans;

• 1 onion head;

• 7-8 canned tomatoes;

• 3 potatoes;

• 4 tablespoons of oil;

• 2 bell peppers;

• 1 carrot;

• pepper, salt.

Cooking

1. Beans swollen in water should be boiled until soft in water, no salt needed. Pour the liquid.

2. In another pan with two liters of water or broth, put potatoes cut into cubes.

3. Ten minutes later we put beans to it, salt.

4. Onion head cut into cubes, fry with four tablespoons of oil.

5. Add the grated carrots.

6. We clear the bell peppers from the middle with the seeds, cut into cubes and also throw in a pan, cook the vegetables until soft.

7. Remove the skin from the canned tomatoes, cut them with a knife, send them to the pan and evaporate the liquid. The vegetable mass should become thick, lightly fry and darken.

8. Transfer the vegetables to the pan and boil with beans for about five minutes.

9. Add black pepper to the soup, if desired, greens. Turn off and before serving give a little brew.

Recipe 4: White Bean Soup with Zucchini

The recipe for white bean vegetable soup, which is suitable for diet or fasting. We use fresh vegetables. Beans will take canned.

Ingredients

• 1 can of beans;

• 2 potatoes;

• 2 tomatoes;

• 1 onion;

• 1 zucchini;

• 1 pepper;

• 1 bunch of dill;

• 2 tablespoons of oil;

• salt.

Cooking

1. Cut the potatoes into small cubes up to 0.5 centimeters. Pour boiling water with two liters. We set to prepare. Five minutes later, salt.

2. Cut the zucchini into slices, lay it to the potatoes.

3. After two minutes, put the pepper, cut into cubes.

4. Open the beans, drain the marinade and transfer to the pan. Cook until soft potatoes, salt.

5. Fry the onion, add the chopped sweet pepper to it, and then the grated tomatoes. Instead of fresh tomatoes, you can add 1-2 tablespoons of pasta.

6. Season the dish with fried tomatoes and onions.

7. After a minute, turn it off. We add herbs and spices at our discretion.

Recipe 5: White Bean Soup with Mushrooms (Pickled)

The recipe for the simplest white bean mushroom soup. Both canned beans and champignons are used, which significantly reduces and simplifies cooking. We use a small jar of champignons 0.3-0.4 liters.

Ingredients

• 1 can of beans;

• 1 onion head;

• 1 can of champignons;

• 3 potatoes;

• greens and salt;

• some oil;

• 2 tablespoons of tomato paste.

Cooking

1. Boil a couple of liters of water, pour potatoes. We cut with any pieces, the size does not matter.

2. Shred the onion, fry for a minute.

3. Shred the mushrooms with slices, send to the onion and cook together. After evaporation of moisture. Then add the tomato, fry a little and turn it off immediately.

4. Open a jar of beans, drain, rinse. We spread to the almost boiled potatoes. We give two minutes to boil.

5. Add mushrooms with tomato paste and onions. Salt soup.

6. Cook for three minutes, season with herbs and can be turned off. We give it to stand for another ten minutes, so that the tastes of the products combine.

Recipe 6: White Bean Mushroom Soup (with dried mushrooms)

The recipe for real mushroom soup with white beans. It tastes best with porcini mushrooms, but you can take others, preferably forest and fragrant.

Ingredients

• 3 potatoes;

• 1 carrot;

• 80 grams of dried mushrooms;

• 150 grams of beans;

• 1 onion;

• greens and oil;

• any spices.

Cooking

1. Rinse the dried mushrooms, pour cold water and leave for at least two hours. Then we change the liquid, pour in clean water and cook for 20 minutes. Take out from the broth.

2. Pour 1.8 liters of pure water into the pan and add two cups of mushroom broth. We put on the stove.

3. Boil the white beans separately almost until ready, add to the pan with mushroom water, let it boil.

4. Put the chopped potatoes to the beans, cook for ten minutes, then salt.

5. Finely chopped boiled mushrooms, fry in a pan along with chopped onions and carrots.

6. Transfer the mushroom mixture with vegetables to the pan and cook for another five minutes. Boil the soup over low heat, salt and pepper.

7. We chop greens. It can be parsley, dill, cilantro. Add to the pan. Throw a leaf of laurel and you can turn it off.

8. Serve on the table with sour cream and homemade croutons.

Recipe 7: White Bean Soup with Beef

The first meat dish, the preparation of which requires about three hours. We use beef on the bone.

Ingredients

• 0.2 kg of beans;

• 5 potatoes;

• 1 carrot;

• 0.7 kg of beef;

• 1 sweet pepper;

• 1 onion;

• salt;

• greenery;

• 4 tablespoons of tomato paste;

• butter.

Cooking

1. Rinse the beef, fill it with water and cook for two hours. Remove the foam when boiling. We take out the finished meat from the broth, discard the bone, cut the pulp and return it back.

2. While the broth is cooked, you need to soak the white beans in cold water for half an hour and boil until almost done. Then shift to meat.

3. Cut the potatoes, put them in a pot with soup. Cook the dish until cooked.

4. Fry vegetables. To do this, chop the onions with carrots, fry until cooked, then put pepper on them. Cook for another minute, put the last tomato paste. If the paste is thick, then dilute with a small amount of broth from the pan. Stew for a few minutes.

5. Transfer vegetables to soup, salt, pepper and simmer everything over low heat for about five minutes. Throw greens and you're done! Serve with sour cream.

Recipe 8: White Bean Soup with Cream Cheese

Another very simple and quick recipe for bean soup. The product is used canned. Common cheeses processed in foil. A dish without potatoes, but with cabbage.

Ingredients

• 1 can of beans;

• 0.3 kg of cabbage;

• 2 curds;

• 1 carrot;

• 1 onion;

• 30 grams of butter;

• 0.5 bunch of dill;

• salt pepper.

Cooking

1. Cut the onion head, rub the carrots and fry the vegetables with butter until rosy.

2. Shred the cabbage, pour in 1.5 liters of boiling water. You can immediately add a little salt.

3. Cook the cabbage for two minutes, put the canned beans.

4. After another two minutes, add the fried vegetables. Cabbage should be almost ready by this moment.

5. We put the processed cheese, which must be grated or finely crushed.

6. Refill the dish with pepper, herbs and turn off. Cheese should dissolve.

White Bean Soup - Tips & Tricks

• When the beans are soaked for a long time in water, it oxidizes. To prevent this from happening, after several hours the beans are in the liquid, the water needs to be changed. It is recommended to do this every three hours. But since soaking is usually done at night, you can just put the dishes in the refrigerator, and in the morning get and rinse the product well.

• To make the beans cook faster, you can pour one tablespoon of cold water into the pan every five minutes.

• If the white beans cracked during cooking, then it is no longer suitable for soup. The product will only spoil the broth and make it cloudy. But you can make wonderful mashed potatoes from such beans: tasty and healthy.

• If the beans are boiled more than necessary, then it is not necessary to put all of it in the soup or throw it away. The product can be added to salads, main dishes and even minced meat, but previously chopped.
