Dried peas are sorted and washed thoroughly until the water becomes clear. It is advisable to soak it overnight. This will significantly reduce cooking time. Some housewives, to speed up the process of softening peas, add baking soda during cooking. But this is not worth it if you want to preserve all the beneficial substances. Only if natural peas are boiled can you get a tasty, and most importantly, healthy soup, without any foreign smell or taste. Soaked beans are washed again, spread in a pan. Pour water so that its level is two fingers higher than peas, and cook on low heat for two hours. In this case, the pan is not covered tightly with a lid, otherwise the rising foam will run out of the pan. Foam must be removed with a slotted spoon or spoon.

Ribs for soup can be used pork, lamb or beef. The main condition is that they are really smoked, and not soaked in liquid smoke. It is better if it is a home-smoked product.

1. Sort the peas. Pour into a sieve and rinse thoroughly under running water. Then put it in a bowl and pour clean boiled water. Leave for a few hours, but better at night. Due to this, peas will become soft and break apart faster. When the peas swell, drain the remaining water and rinse it again. Transfer the peas to a pan and fill with clean, filtered water.
