Pouring saury pie - general cooking principles

The basis of the dough for jellied pies is usually the following products: kefir, sour cream, mayonnaise. Eggs are added to them, sometimes additional fats are present in the recipe: oil, margarine, melted lard. Baking powder is always added, ordinary soda can be used. The principle of kneading the dough is very simple - usually all the ingredients are mixed with a spoon or mixer. The mass does not need to insist.

Saury for filling use canned in oil or in their juice. The liquid is removed. Pieces of fish are crushed, mixed with other ingredients.

What is added to the saire:

• boiled rice;

• eggs;

• vegetables;

• greenery.

Most often, the filling is laid between two layers of batter. But sometimes the whole filling is laid out in molds and poured on top. In this case, the dough is made thinner than for fritters, so that it penetrates between pieces of fish and other ingredients.

Jellied pies in the oven at 180-190 degrees 30-45 minutes. If a multicooker is used, then the time depends on the height (thickness) of the product. But most often enough 50-60 minutes.

Jellied pie with saury and potatoes

The recipe for a simple jelly pie with saury. There is also potato in the filling. The recipe is convenient in that the vegetable does not require pre-treatment. You do not need to cook it. But if a couple of boiled potatoes remain, then they can be used instead of raw tubers.

Ingredients

• 0.25 l sour cream;

• 0.25 l of mayonnaise;

• 3 eggs;

• 7-8 tablespoons of flour;

• 0.5 tsp salt and as much baking soda.

Filling:

• 2-3 potatoes;

• 1 can of saury;

• 1 onion.

Cooking

1. Mix sour cream with soda, leave aside, let the reaction pass. In the meantime, break the eggs into the bowl, throw the salt and add the mayonnaise. Whisk with a whisk until smooth.

2. Combine sour cream with egg mass, stir.

3. Open the saury, drain all the liquid, even if it is not enough. Knead the fish with a fork.

4. Onion cut into small cubes, grate potatoes.

5. We collect the cake in a greased form. Pour about half the dough, spread with a spoon.

6. Now you need to put the potatoes on the dough, then sprinkle it with onions. It is important not to rush and gently sprinkle so that piles do not appear, and the filling under the weight does not fall into the dough.

7. Sprinkle the vegetable layer with spices. If the saury is salted, then do not put salt.

8. Sprinkle a layer of mashed saury.

9. Now pour the dough on top and carefully level it with a spoon. If there are small gaps, then it's okay. When baking, the cake rises, the filling hides.

10. We put in the oven, which was already supposed to warm up to 180, bake for 35-40 minutes.

Jellied pie with saury and rice

Variant of jellied pie with saury and boiled rice. You can take any cereals, but the filling is more beautiful with a long cereal. The dough is cooked on kefir with the addition of a small portion of sour cream. If there is fatty kefir, then you can only use it in an amount of 350 ml.

Ingredients

• 250 g flour;

• 0.25 liters of kefir;

• 100 g sour cream;

• 3 eggs;

• salt and soda.

Pie filling:

• 150 g of boiled rice;

• 150 g of onion;

• 2 banks of saury;

• butter.

Cooking

1. Before kneading the dough, you need to prepare the filling, as some ingredients need to be cooled. Boil rice in water, we need 150 g of the finished product. You can use the leftover side dish.

2. Onion cut and fry in oil, cool.

3. Open the banks of saury, get rid of the liquid, large spinal bones can be removed. Knead with a fork so that the pieces become small.

4. Combine all the ingredients of the filling. We taste it. The degree of salinity of the fish is different. Add spices, herbs, pepper if desired.

5. For the dough, mix all the ingredients in a bowl. Salt put an incomplete teaspoon. Soda is enough half. Or use 7-10 g of ripper for the test.

Ingredients

• 300 ml of kefir;

• 15 g of sugar;

• 70 g of margarine or butter;

• 10 g of soda;

• 3 eggs;

• 1.5 cups flour;

• 1 onion;

• saury bank;

• 30 ml of vegetable oil .;

• 300 g of cabbage.

Cooking

1. Melt margarine, cool.

2. In a pan, heat 30 ml of oil, add the chopped onion head.

3. As soon as the onion is lightly browned, toss the slaw. We fry almost until ready, send the filling to cool.

4. Open the jar of fish, remove the liquid, knead. We shift the saury to the cabbage, mix, add salt and other seasonings to taste.

5. Cooking the dough. Combine the eggs in a bowl with kefir, salt and pour in the margarine, which should already have cooled. Beat with a whisk, throw soda and sugar. Stir again.

6. Fill the dough with flour. We evaluate the consistency. If kefir was liquid, then you can add a couple more tablespoons of flour. By consistency, the dough should resemble sour cream, drain from a spoon.

7. Making a cake. Smear the dough layer, put the filling on it, cover it with the remaining dough.

8. We bake for about half an hour, check the readiness of the crumb, the filling in any case will come faster, since it has been previously processed.

Jellied pie with saury and green onions

The recipe for a simple jellied pie with saury from kefir dough with butter. To save money, you can use margarine, but preferably milk.

Ingredients

• 2 banks of saury;

• 1 large bunch of onions;

• 1 bunch of dill;

• 400 ml of kefir;

• 2 eggs;

• 100 g of oil;

• salt 1 tsp. and the same amount of soda;

• 1 tablespoon of sugar;

• 2.5 cups flour.

Cooking

1. Melt butter first. A small piece needs to be greased with a baking dish, the rest will go to the dough. Leave to cool.

2. Beat eggs with salt and sugar.

3. Pour kefir into eggs, pour soda, stir and leave to extinguish for a minute.

4. Once the reaction has passed, you can add melted butter or margarine. Immediately pour wheat flour, knead the dough.

5. Knead the saury, removing the liquid from it. We cut washed, dried greens, mix.

6. Pour half of our dough into a previously greased mold, use a spoon to level the layer so that it is approximately the same thickness.

7. We spread the fish filling. But we try so that it does not touch the sides of the form.

8. Pour the dough, send for baking. Cook for half an hour at 180.

9. Similarly, you can collect the pie in a slow cooker. From this amount of dough, it will turn out high, so you will bake for at least 60-70 minutes in standard mode.

Sour cream jellied pie with saury and eggs

The composition of the dough for this cake is minimal. Knead in sour cream. Do not use a product with a fat content of less than 20%.

Ingredients

• 300 g sour cream;

• 3 eggs;

• 1.3 cups flour;

• 1 tsp cultivator;

Filling:

• 3 eggs;

• 1 bunch of onions.

Unusual, cheap, tasty and very simple cake. You will need instant noodles in briquettes like "Rolton".

Ingredients

• saury bank;

• 3 tablespoons of flour;

• 200 g mayonnaise;

• 3 packs of noodles;

• 1 onion head;

• 0.5 tsp cultivator;

• 3 eggs.

Cooking

1. Take noodle bags and crumble through the packaging. Pour all three in one bowl. Add seasoning from one bag, remove the rest.

2. Add to the noodles milled with liquid saury. If the jar contains peas, onions or slices of laurel, then be sure to remove.

3. Add immediately mayonnaise with flour, eggs and a cultivator, stir. Leave the dough for 15 minutes.

4. During this time, lightly fry the chopped onion. You do not need to brown, just bring the pieces to transparency.

Jam pie with saury - useful tips and tricks

• The butter in the dough for the jellied cake can be replaced with mayonnaise with a fat content of 60% and above. You can also replace part of the mayonnaise with oil if the sauce is not enough.

• The spinal bones in saury are not always small. Therefore, when chopping fish, it is desirable to look at the pieces and what is unnecessary to remove. The same applies to large spices: laurel, peppercorns. They are not needed in the filling.

• If you don’t like the light top of a pie baked in a slow cooker, you can always turn it over. This should be done at the very end of cooking, when the dish is already strong and roasted.

• The crumb of the jellied cake will be porous and airy, if the proteins are separated, beat separately in a strong foam, and then add to the prepared dough.

• If onions are added to the filling and in large quantities, then it is better to fry it first in a pan. The cake will turn out tastier, more aromatic, the onion will certainly be baked, it will not crunch.
